  • a large leek
  • 2 free range eggs
  • 2 Greek flatbreads
  • 1 tbsp creme friache
  • a crumbling of feta cheese
  • a few slices of salad onions
  • a pinch of chilli flakes/pink peppercorns/mustard seeds

A quick and easy weekend brunch? This fits the bill perfectly

  1. Start with the leek, finely sliced, in a saucepan, with a good knob of butter and a glug of olive oil. Add a little sea salt and black pepper, then gently sauté for 10/15 mins, until the leeks have softened and started to brown and char a bit at the edges
  2. Whilst they’re on the go, heat some oil for your eggs and fry these over a medium to hot heat to crisp up the whites a bit. At the same time, put the flatbreads under the grill for a couple of mins, turning once or twice
  3. Finally, add the crème fraîche to the leeks, mix well and spoon over the flatbreads. Pop the eggs on top, sprinkle with a little feta cheese and finish with some cracked pink peppercorns or chilli flakes, a few salad onions and a sprinkling of mustard seeds
