  • 225 g Plain Flour
  • 85 g Caster Sugar (Plus More For Dusting)
  • ½ tsp Mixed Spice
  • ½ tsp Baking Powder
  • 100 g Unsalted Butter (Cut Into Cubes)

  • 1 Egg (Beaten)
  • Splash Of Milk (Optional)
  • Strawberry Jam (Optional)

Quick & Simple Welsh Cakes

This is one tasty snack, not completely faithful to the traditional welsh recipe but it's a delicious little cake with all the flavours of a traditional welsh cake

Total 18 minutes
  1. In a large mixing bowl add all the dry ingredients and mix together, now add the cubed butter to the mix and with your finger tips start to rub together for 2-3mins and keep doing this until you have a crumbly mixture. Now pour in the beaten eggs and begin to stir together until the mixture begins to look like a dough, if it's a bit dry a splash of milk.
  2. Lightly flour a clean surface and dust the top of the dough with flour, now grab a rolling pin and begin to roll the dough to a thickness of your first finger. Now with a round cookie cutter, if you don't have a cutter then use a glass or a cup, begin to cut circles out and place them on a plate and repeat for all, re-using the rest of the dough to make more cakes.
  3. Once all dough is used, grab a large non stick frying pan and place over a medium heat. Add a tsp of butter to grease around the pan, once butter has melted add the welsh cakes to the pan 5 at a time and cook for 3mins each side until lightly golden brown, then flip and repeat for the other side, once cooked remove and place on a plate, dust both side with caster sugar and cover with foil to keep warm.. Repeat for the rest of the cakes. Once all cooked, serve up with jam or tuck in straight away. Enjoy
