

BBQ Lamb Chops, Roast Aubergine with Sesame, Mint, Coriander, Chilli & Yoghurt Dressing

Roast Aubergine:
- Pre-heat the oven to 190℃
- Place the aubergine halves flesh side up on a lined baking tray. Drizzle over the olive oil and add the oregano, paprika, salt and pepper until each half is nicely seasoned.
- Place in the oven to roast for 40 - 45 mins.
- Remove from heat and plate with a sprinkle of sesame seeds, fresh chilli slices, mint and coriander leaves and a drizzle of yoghurt.
Lamb chops:
- Season the chops with a drizzle if olive oil, salt and pepper. If you don't have a BBQ, add to a hot frying pan for 4 minutes on each for a medium cook. If cooking on a BBQ 3 minutes each side.
- Remove from heat and leave to rest
