Ingredients
  • 1¾ cup flour (I used a mix of all purpose and normal)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsps muscovado sugar / brown sugar
  • 4 tbsps cocoa powder
  • 2 ripe bananas (mashed)
  • ½ cup oat milk (or add a bit more if the mixture it’s a bit too thick still)
  • 1 tbsp soft ricotta (or full fat yoghurt)
  • 4 tbsps coconut oil
  • 1 tbsp Apple cider vinegar
  • 1 egg
  • 1 tbsp warm water
  • Handful slightly crushed walnuts (to top)

Chocolate Banana Walnut Loaf

This chocolate cake recipe is deliciously moist and so moreish. Perfect with a couple of coffee or tea.


  1. Preheat oven to 180℃ (start with the bottom heat setting)
  2. Oil a rectangular baking tin (I oiled with coconut oil)
  3. Combine all the wet ingredients (in a big bowl) and dry ingredients separately (everything except for the walnuts)
  4. Fold in the dry ingredients to the wet
  5. Combine well then place into the baking dish. Top with walnuts, pressing them down slightly
  6. Bake for 10 minutes first at the bottom heat setting
  7. At the 10 minute mark, set the heat setting throughout the whole oven. Bake for around 25-30 minutes (check at around the 20 minute mark first). I also poked a couple small holes to release some air.
  8. Then bake for the remaining time or until the fork comes out clean
