Ingredients
  • 400 g Cod fillets
  • 1½ Cups of cherry tomatoes
  • 3 Garlic cloves (finely diced)
  • 1 tsp Pink peppercorns (freshly ground)
  • 1 tsp Black peppercorns (freshly ground)
  • 1 tsp Lemon juice
  • 2 Cup of chicken stock or warm water
  • 2 tbsps Freshly chopped basil leaves
  • 1 tbsp Freshly chopped cilantro leaves
  • 2 Red chillies
  • 1 tsp Smoked paprika
  • Salt for seasoning
  • 2 tbsps Oil

Cod in a Tomato and Herb Broth


  1. Cut the cherry tomatoes in half and then heat 2 tbsp of oil in a pan and once it is hot, add the minced garlic and the cherry tomatoes. Let it slowly cook for 3-4 minutes till the tomatoes are blistered and soft but are still holding their shape.
  2. Then add the ground pink peppercorns, black peppercorns, smoked paprika and salt and mix it gently and continue sauteeing.
  3. Add the slit red chilies and again sauté for another couple of minutes.
  4. Now add the chicken stock or warm water to the pan and mix everything well and let it simmer on medium heat. Let the broth simmer for another 10 minutes till it becomes slightly thicker and the flavour develops.
  5. Add the finely chopped herbs like basil and cilantro along with the lemon juice and mix everything well. Check the seasoning and the flavour of the broth at this stage
  6. Now add the cod fillets gently into the broth and let it cook gently in the broth. Spoon some of the broth over the cod fillets as it cooks. Let it cook for around 5-8 minutes on medium heat and that is usually enough to cook the cod fillets. After 6-7 minutes check if the cod is cooked through - if you are able to flake a fillet very easily then it is cooked. Cod fillets are very delicate so try not to move them around too much else it will flake and break.
  7. Switch off the heat and then add some more finely chopped herbs and serve over steamed rice, quinoa or with fresh crusty bread
