  • 8 Boneless and skinless chicken thighs

  • 1 tsp (Heaped) smoked paprika
  • ½ tsp Oregano
  • 50 g Chopped chorizo
  • 400 g Can cherry tomatoes
  • ½ tsp Cayenne pepper
  • 2 Bay leaves
  • 1 tbsp Tomato purée
  • ½ tsp Coarse black pepper
  • 2 Chicken stock cubes
  • 200 ml Boiling water
  • 1 tsp Soft brown sugar (sweetener will be fine)
  • 1 tbsp Oil (frylight will be fine)

Oven cooked Spanish chicken

so full of flavour and will take you to Spain with the Smokey paprika and the juicy chicken thighs just fall apart

Prep 20 minutes
Total 1 hour 50 minutes

1. Preheat oven on 180

2. Heat up a large frying pan add the oil add the chicken thighs and brown on both sides then transfer to ovenproof dish

3. In the same pan add the onions and garlic when softened add the chorizo fry for a couple of minutes add all the herbs and seasonings stir through the tomatoes tomato purée and brown sugar stir add the chicken stock to the boiling water add stir them add the peppers stir them through and transfer everything to the oven proof dish

4. Pop the lid on the dish and pop in the oven and let it do it’s thing.. check halfway through the cooking time to make sure it’s not sticking to the bottom

5. After cooking time check the chicken falls apart if so it’s done!!

6. Serve with garlic roast potatoes and veg or rice and salad even delicious with creamy mash 😍 hope you enjoy!!
