

A slice of soft and fluffy butter cake is the perfect companion for a warm cuppa Ceylon black tea. No high tea table is complete without this delicious pillowy treat. Although there are many recipes for butter cake out there, this is one of the best known and foolproof recipe which we can alter the sweet level without harming the texture or consistency of the cake.
this could be served with a thin layer of butter icing, Italian buttercream or any kind of frosting or without any frosting too.
Replace 2tbs of all purpose flour with corn flour.
Sift flour, baking powder and salt 3 times.
Separate egg whites and yolks.
Beat egg whites until stiff peaks.
Beat butter until pale and fluffy.
Add sugar and beat until light in color and creamy
Add egg yolks one at a time and beat. Add vanilla.
Now add and fold milk and flour alternatively.
always end with flour.
Then fold in the beaten egg whites.
When the batter is well mixed and smooth,
Pour into a 9inch pan lined with parchment.
Bake at 350F, 180c for about 40min. Check after 30 min without opening the oven. Take out when a dry skewer inserted comes out clean.
Cool on a wire rack.
