Ingredients
  • 4 tbsps Unsalted butter, divided
  • Large shrimp
  • Salt and freshly ground black pepper, to taste
  • All purpose seasoning, to taste
  • 5 cloves garlic, minced
  • Juices of 1 lemon, or more, to taste
  • Chopped spring onions (optional)
  • ½ Chicken stock cube

Garlic butter shrimp

  1. Season shrimp/ prawns with salt, freshly ground pepper and all purpose seasoning to taste .
  2. Melt 2 tbsps butter in a large skillet over medium high heat. Cook, stirring occasionally, until pink, about 2-3 minutes.
  3. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes. Stir in remaining tablespoons butter, 1 tablespoon at a time, until melted and smooth.
  4. Stir in shrimp and gently toss to combine.
  5. Serve immediately, garnished with spring onions or parsley leaves, if desired.
