Addicting onions chutney

I find this to be the best chutney there is. It pairs with cheese like a match made in heaven and being single for a while now I just love good matches, what can I say… it’s crunchy, it’s a little sweet and caramelized and I am sure that you will impress your guests at the dinner table. Plus, I believe this to be also a perfect Christmas present in a cute basket: pair it with a slice of a good young cheese et voilà!

Soak the raisins in a bowl of hot water.


In a pan, heat the olive oil and the thinly sliced red onions. Let them cook at medium - low heat for about 20 minutes. 


Add the sugar and let it cook for another 15 minutes, always at medium – low heat. Only make sure they won’t burn, we just want them to cook. 


 Add the raisins and all of the liquids (red wine, cassis liquor, aceto balsamico) then let cook until it will be dense and caramelized – it should take about 30 minutes. 


Before storing it in the jars, let it cool down completely. It will last in the fridge for about 3 weeks, but I don’t think you’ll resist to it.
