1.Add water to a pan and bring to the boil and add your rice, now heat oil in a pan and add the onion, cook for 3-5 min,.
2.Now stir in the garlic, ginger and spices and cook for a further 3-5 min.
3.Now pour in the coconut milk, tomatoes, and lime and cook for 10-12 min, stirring occasionally.
4.Now your rice should be cooked, stir in your pilau seasoning and pop lid back on to keep warm.
5.Now add the prawns and cook for 5-7 min.
6.Now add rice and curry to a bowl, garnish with a wedge of lime, some chopped coriander and fresh chilli
Add a little cornflour if you want your sauce thicker.
