Does it ever happen to you that in the middle of the day you get one of those tempting cravings that lead you to desire unhealthy snacks? Oh my, do I know that feeling. I end up eating a bag of chips or a full bar of chocolate, which sometimes is a guilty pleasure I allow myself, but some other times I just wish I had a healthier option at home. Well, these bars are filled with healthy fat and let me tell you they are simply delicious. Every friend of mine who tried needed the recipe ASAP, so here I am sharing it with all you my lovelies. Let’s get to it!
- In a mixer, blend the pecan until you reach a sort of flour consistency. Then, add the dates, the coconut oil and the salt and blend once more until you reach a paste that, when combined, sticks together. Set aside a little bowl of the batter that we’re going to use as a final topping.
- In a bowl, mix the cocoa powder with the coconut oil and maple syrup.
- Line a baking pan with parchment paper and evenly spread the pecan nuts mixture on the bottom. Then cover with the cocoa topping and at last sprinkle the batter we set aside on top.
- Leave minimum 2 hours in the freezer (I do overnight usually) and, when hardened, cut in little rectangles. To make them cuter I singly wrap every bar in parchment paper and close it with a string, but since it takes a lot of time, sometimes I just throw them in a bag and that’s it. Keep them in the freezer and when you crave one, eat it as soon as you take it out otherwise it melts.
