Ingredients
  • 360 g Baby potatoes
  • 100 g Pancetta/lardon’s
  • 1 tbsp Parsley
  • 1 tbsp Parmesan
  • 1 tbsp Butter
  • 2 tbsps Oil
  • 2 Garlic cloves

Bacon Parmesan Potatoes

  1. Fill a pan with cold salted water and get your baby potatoes in. Bring to the boil and cook until fork tender (7-10 minutes). Drain your potatoes and cut in half.
  2. In a large frying pan on medium heat add your oil. Once hot add your potatoes flat side down and leave them to cook for 5-7 minutes. Add your pancetta to the pan, cook for a further 2 minutes. Flip your potatoes, add your butter, garlic and baste.
  3. Add your parsley and season with pepper. Plate up your potatoes and add grated parmesan, serve and enjoy.
