Ingredients
  • 2 Small Fennel Bulbs
  • 1 Granny Smith Apple
  • 4 Smoked Mackerel Fillets
  • Parsley
  • Dill
Dressing
  • 3 tbsps Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tsp Clear Honey
  • 1 tsp Wholegrain Mustard
  • Pinch Salt

Mackerel, Fennel & Apple Salad

Mackerel, Fennel & Apple Salad Mackerel, Fennel & Apple Salad

  1. Chop the fennel into quarters from root to tip, then slice very finely with a mandolin or sharp knife. Repeat with the apple, after removing the core.
  2. Add all the dressing ingredients to an empty jar, seal with a lid and shake for 20 seconds until emulsified. Taste for seasoning and adjust with extra lemon or honey.
  3. Add the spinach, finely sliced fennel and apple and roughly chopped dill and parsley to a large bowl. Tear up the mackerel into bite-sized pieces and add to the bowl. Drizzle with the dressing and toss to evenly coat everything. Taste for seasoning and eat immediately.
