Ingredients
  • 4 frozen fish fillet (we used pollock)
  • 1 tin of tomatoes
  • 1 clove garlic
  • ¼ red chilli
  • 70 g chorizo
  • ¼ can of water
  • ½ tsp dried parsley
  • 1 Heaped teaspoon fresh parsley
  • juice of half a lemon
  • 1 Heaped teaspoon smoked paprika
  • ½ onion
  • 1 tbsp tomato puree

Spicy Baked Fish & Chorizo

This budget friendly dish can be made with cost effective ingredients. It's low in cost bigh high in flavour!


  1. Finely dice the onion and fry off in a little oil, once they become fragrant add the garlic and chilli. Season this and the add in the diced chorizo.
  2. Cook this until the oils start to release then add in the tomato puree, paprika and cook for a further 5 mins.
  3. Once it looks like its drying, add the tomatoes and water and then simmer until its reduced by 1/3 (around 15 mins).
  4. Add in the dried and some of the fresh parsley and pour into a baking dish
  5. Spread along the bottom and then place 4 fish fillets ontop of the sauce
  6. Bake for about 13/14 mins or until the fish is cooked.
  7. Serve with salsa verde & rice, pasta or potatoes (recipe for this coming soon)
