The Ultimate Gooey Chocolate Brownies
with white chocolate chips
Crispy on the outside and soft on the inside, this is my recipe for the ultimate gooey and fudgy brownies. These brownies are a decadent and indulgent treat and I can't promise that you won't be tempted to keep reaching into the cake tin for more.
Preheat to oven to 180°C and line a shallow baking tin with parchment. Grease the parchment with butter so the brownies don't stick.
In a glass jug, put the butter and broken up pieces of dark chocolate. Put the jug in the microwave for 30-second intervals, stirring in between. Once the mixture is smooth and melted pour it into a large bowl.
Stir in the sugar, eggs and vanilla so that it forms a thick mixture. Then, sift in the cocoa powder, flour and a pinch of salt. Gently fold this into the mixture until everything is combined and there are no lumps.
Break up the chocolate buttons into smaller chunks (set aside 9 for decoration) and stir them into the brownie mixture to evenly distribute them. Next, pour the mixture into the baking tray. Put the rest of the chocolate buttons on top for decoration. Bake for 25-30 minutes, until the top is crispy and shiny. Poke a knife through the brownie to check that it is cooked all the way through.
Once it is completely cooled, cut the brownie into 9 evenly sized pieces and keep them in an airtight tin.
