Ingredients

2 chicken breasts
-
2 chicken leg portions
-
1 shot of spiced rum
-
1 small handful of mint leaves (10 leaves)

1 handful of coriander
-
1 clove of garlic
-
1 Heaped teaspoon brown sugar
-
1 lime, juiced
-
50 ml olive oil
-
1 tsp all purpose seasoning
-
1 spring onion
-
¼ white onion
-
¼ red chilli
-
Salt and pepper to taste


Mojito Roast Chicken
- Mix the ingredients (apart from the chicken) in a blender and then coat the chicken for 4-24 hours (reserve about 2 or 3 tbsps to baste whilst cooking). The longer you marinate, the better.
- Roast this at 180℃ for 35-40 minutes or until the juices run clear, baste half way
- Serve with lime wedges, rice or potatoes and enjoy
