Burrata & spring vegetable spaghetti

Spring is here and its time to brighten up dinner time!

ingredients
  • 3 Cloves garlic finely chopped
  • 1 Red chilli finely chopped
  • 4 Spring onions finely sliced
  • 80 g Frozen petit pois
  • 80 g Chopped fine green beans
  • 80 g Chopped broccoli
  • 6 tbsps Olive oil
  • 1 Burrata
  • Handful of rocket
  • 100 g Grated parmesan
  • Salt and pepper
  • 170 g Spaghetti

Burrata & spring vegetable spaghetti

Spring is here and its time to brighten up dinner time!

  1. Put a pan of salted water on to boil
  2. Heat the olive oil in a wide sauté pan on a medium heat
  3. Fry garlic, chilli and spring onion until soft and translucent
  4. Add the vegetables and carefully add one ladle of the salted boiling water
  5. Reduce the heat to low and allow the vegetables to gently cook, season with pepper
  6. Add your pasta to the boiling water and cook until al dente
  7. Add the pasta to the sauce along with the rocket and a good handful of parmesan cheese
  8. Toss the pasta in the sauce adding more of the pasta water if needed to loosen the sauce
  9. Remove the pan from the heat
  10. Add the Burrata and toss through the pasta until its melted and creamy
  11. The pasta is ready to serve. Finish with a good drizzle of oil and a handful of parmesan
