  • 250 g Good quality prawns
  • 1 Baby gem lettuce
  • Around 1/5 of a cucumber, finely diced
  • 1 chilli finely diced
  • 1/2 mango, finely diced
  • 4 spring onions, finely diced
  • 6 cherry tomatoes, finely diced
  • 2 Heaped tablespoon Sriracha sauce
  • 2 Heaped tablespoon Sweet chilli sauce
  • 1 tsp Runny honey
  • 1/2 red onion, finely diced
  • Juice of half a lime

Spicy prawn lettuce cups

These are the perfect summer dish. They make for a fabulous starter, or if you are like me, have a load of them for a main dish instead! They are light, but so delicious! This would serve four as a starter, or two as a main dish with some sides. They only take 20 minutes to prep and cook too - can you think of anything better?


  1. Marinate your prawns in the sriracha, sweet chilli and honey. I like to leave them for a good two hours, but if you haven’t got time, even a few minutes will do whilst you prep the rest!
  2. Finely dice all of your veg and mango and put into a bowl. Squeeze the juice of half a lime and mix with a dash of sea salt. 
  3. Break off the lettuce leaves so they remain in ‘cup’ shapes and will hold the mixture. 
  4. Put your marinated prawns into a frying pan and cook for around 5 minutes or until they go pink and look cooked. Don’t over cook your prawns here! Your sauce should have thickened slightly too. 
  5. Time to make! Add your prawns in the sauce and a drizzle of the sauce, then top with your salsa and serve. Enjoy!
