  • 5 cloves
  • 1 tsp ground coriander

  • 6 cardomom pods
  • 1 cinnamon stick

  • 1 small onion, finely sliced
  • 2 cloves of garlic, finely sliced
  • 1 dsp fresh ginger, grated
  • pork loin (enough for 2), diced
  • 1 can of chopped tomatoes
  • 200 ml vegetable stock
  • 1 tsp sugar
  • 1 tsp hot pepper sauce
  • 1 mango, peeled and cubed
  • a small bunch of fresh mint

This is a perfect way to use up your left over Sunday roast! Made with fresh mango, mint and hot pepper sauce, it has a delicious sweet, fruity flavour with a warm spciy undertone! A lovely mid week meal for all the family!

  1. Heat a good glug of olive oil in a pan and when it's hot, add in your spices first and stir around for a few moments, before adding in the onion, ginger and garlic. Stir fry for a few minutes, adding in your meat and covering it well with the spices
  2. Then add in the tomatoes, stock, sugar, hot sauce and a good pinch of salt. Stir well, bring to the boil and then immediately reduce to a simmer for 15/20 minutes, until the meat is piping hot throughout
  3. Seven to ten minutes into the cooking, add in the mango. Finish with plenty of the fresh mint and serve with basmati rice... all mixed together!
