Ingredients
Noodles
  • 400 g Rice Noodles
  • 400 g Prawns
  • 2 Chicken Breast Chopped
  • 4 Garlic Cloves Minced
  • 2 Heads Pak Choi Chopped
  • 250 g Beansprouts
  • 2 Eggs Beaten
  • 25 g Butter
  • Spring Onion
  • Coriander
  • Salted Peanuts Chopped
  • Juice of 1 Lime
Sauce
  • 3 tbsps Sesame Oil or Olive Oil
  • 5 tbsps Soy Sauce
  • 2 tbsps Dark Soy Sauce
  • 4 tbsps Fish Sauce
  • 4 tbsps Rice Wine Vinegar
  • 1 tbsp Chilli Flakes
  • 3 tbsps Honey
  • Zest of 1 Lime
  • 1 tbsp Brown sugar

  1. Place your noodles in a bowl of boiling water for about 20 mins until softened.
  2. Mix all of your sauce ingredients in a bowl.
  3. Heat a couple of tbsp of olive oil in a pan, add garlic & cook for 1 min over low heat until softened.
  4. Add butter and melt, don't let it brown.
  5. Add chicken, season and cook for 2-3 mins.
  6. Add pak choi, season and cook until starting to soften for 1-2 mins.
  7. Add prawns, season and cook for 2-3 mins.
  8. Heat a little oil in another pan, add eggs and a tsp of soy sauce, cook and roughly scramble.
  9. Stir in beansprouts.
  10. Stir in noodles and pour in sauce.
  11. Add in egg mix.
  12. Add a little chicken stock if a little dry, I didn't need to.
  13. Stir in lime juice, coriander and spring onion.
  14. Serve with crushed peanuts, drizzle of soy sauce and a wedge of lime.
