Ingredients
  • 2 Eggs, beaten
  • 30 ml Skimmed Milk
  • 1 tbsp Fat Free Yoghurt
  • 3 tsps Marmite
  • 4 tsps Parmesan, grated
  • 120 g Oats
  • 2 tsps Baking Powder
  • Salt and Pepper
  • 2 Carrots, finely grated
  • 15 g Reduced fat cheese, grated
  • 15 g Red Leicester Cheese

Cheese and Marmite Muffins

Total 30 minutes
  1. Preheat your oven to 160℃  fan assisted
  2. In a bowl mix up all the ingredients in order of the ingredient list, apart from the reduced fat or red Leicester cheeses
  3. Spray your mould with calorie controlled cooking spray. The mould I use is a Lakeland silicone muffin tray.
  4. Pour the mixture evenly into each mould.
  5. Add a combination of the two grated cheeses on top of each muffin.
  6. Bake in the oven for 20-25 minutes. Allow to cool in the tray before removing. They can be eaten hot or cold.
  7. Will store in the fridge in a sealed container for 3-4 days. They can also be frozen
