  • 1 cup pancake mix or flour
  • 1 cup (non-)dairy milk
  • 2 eggs
Filling
  • 1 cup yogurt
  • ¼ cup cream cheese
  • 1 tsp vanilla extract
  • 2 tsps powdered sugar
  • 4 strawberries, chopped

  1. Add pancake mix, milk and eggs to a blender and mix until smooth.
  2. In a small bowl, add the yogurt, cream cheese, vanilla extract and powdered sugar and mix until smooth. Set aside.
  3. Prepare the pancakes in a preheated skillet. Grease the pan between each crepe. Pour a thin layer in the skillet and tilt until the surface is covered with batter. Flip once bottom is set and cook for another minute.
  4. Add two spoons of cream cheese filling on each crepe, top with strawberries and roll up. Enjoy!
