  • 6 fresh ( or previouly frozen) sardines
  • 15 cherry tomatoes, halved
  • 2 tsps capers
  • 2 medium green chillis, finely chopped
  • 4 limes, halved
Grilled Sardines with a Lime and Green Chilli Salsa
A dish that will immediately transport you to lazy lunches in the shade of olive trees, with a cool, crisp glass of wine!

Sardines scream summer! And I can't think of any other way of eating them than teamed with those marvelous Mediterranean flavours of olive oil, fresh tomatoes, limes, capers and chillis. Some fresher than fresh crusty bread is a must with this, to soak up all the sublime juices!

  1. Start with the sardines, brushed on both sides with olive oil and seasoned with sea salt and black pepper. Pop under a moderate grill and cook for four to five minutes each side (less if they're smaller than mine), until they're nicely browned and cooked through
  2. Whilst they're cooking, make the salsa with the tomtoes, capers and chillis in a bowl. Add in the juice from three limes and two or three tbs of extra virgin olive oil. Season, mix well and set aside
  3. Finally, transfer the sardines to a serving dish/platter and spoon the salsa around them. Finish with an extra squeeze of lime juice and a generous drizzle of the olive oil. Serve with crusty bread
