  • 1 cup granola
  • ¼ cup coconut oil, melted
  • 2 tbsp date syrup
Cheesecake filling
  • ¼ cup yogurt
  • ¼ cup cream cheese
  • ½ tsp vanilla extract
  • 2 tsps honey

  1. Preheat oven on 170C.
  2. Process granola in a food processor until finely crumbed
  3. Mix with melted coconut oil and date syrup
  4. Fill greased cupcake or tart molds with granola mixture, gently press with the back of a spoon
  5. Bake in the oven for 15 minutes. Transfer to a wire rack and cool completely.
  6. Prepare the filling by mixing the ingredients until smooth.
  7. Fill the baked granola cups with the cream cheese filling. Refrigerate for at least 3 hours to overnight.
