  • 4 slices of sourdough bread
  • 150 g cheese of choice (we used red leicester)
  • 1 tbsp tomato puree
  • 2 tbsps harissa paste
  • 1 red onion
  • 1 red pepper
  • 2 tbsps mayo

Harissa Cheese Toastie


  1. Slice the onion and pepper, season and fry this off in a little oil for about 5-10 minutes until soft. Grate your cheese and mix it with the tomato puree, salt and harissa paste.
  2. Once the onions and peppers are done remove from the pan. Spread the mayo on the outside of the bread then place the bottom piece mayo side down in the pan, then add the cheese mix and fried veg, then top with the other piece of bread with the mayo on the outside.
  3. Cook this on a low to medium heat until the cheese has melted and the bread is golden brown.
  4. Serve with tzatziki
