Brown butter potato waffles

Prep 15 minutes

  1. Chop the potatoes (I choose to leave the skin on) and boil them for 10-15 minutes until a knife pierced them easily.
  2. Whilst the potatoes cook, brown the butter in a separate saucepan. Stir constantly until the butter stops bubbling and the milk solids have turned an amber colour. Transfer into a bowl.
  3. Start preheating your waffle iron.
  4. When the potatoes are cooked, drain them and mash them roughly with a fork. Add in 8 tbsps brown butter and salt to taste (I used 1/3 tsp). Add more brown butter if you have it and you think it needs it.
  5. Spray the waffle iron with oil and put 1/4 of the brown butter mashed potato into the centre of the waffle iron. Cook for 5-6 minutes until golden brown and a nice crunchy crust has developed.
  6. Carefully remove from the waffle iron (this might be easiest after turning it off and leaving it for a minute first) before repeating with the remainder of the mixture.
  7. Serve in place of fries or hash browns as part of your favourite breakfast or dinner.
