Spinach, Lime and Chilli Pasta

Green is clean...

Cook your pasta in salty water as per the instructions. While you're doing that slice you shallot and fry until softened then add one teaspoon of garlic paste, stir and remove from the heat.


In a blender add the ricotta, spinach, chillies, basil and the juice of 2 limes. Whiz until smooth and then add to the pan with a generous amount of salt and pepper. Heat through.


Add the pasta to the sauce once cooked and sprinkle with some more basil, the remaining lime juice and parmesan.
