  • 1 Cup chopped spinach
  • ½ Cup cubed bocconcini
  • 5 slices turkey bacon
  • 3 tbsps water
  • ½ tsp salt

Beat eggs, water and salt.

Add the remaining ingredients and divide evenly among 9 cups (placed in a muffin tin.)

Bake at 350F for 20 min or until eggs set.

Let cool and place in a container. Breakfast muffins can keep for 2-3 days in the fridge or 1 week + in the freezer.
