Ingredients
  • 1 tin of coconut milk
  • Half a pot of red thai curry paste (5-6 tbsp)
  • 1 pack of king prawns (250g) if using smaller prawns 2 packs
  • 200 g of wok noodles (or noodles of your choice)
  • 2 peppers (1 red, 1 green) chopped into small pieces
  • 100 g of green beans chopped into 2cm pieces.
  • 1 handful of coriander chopped
  • 1 handful of spring onions.
  • 2 tbsps of garlic granules
  • 1 tbsp of chilli flakes
  • 3 tbsps of lemon juice (optional but really good)
  • 5 tbsps of soy
  • 1 lime (optional)
  • 1 green chilli (optional)

Thai Red Curry Noodles with Prawn


  1. Add the red curry paste and coconut milk into the pan and let it simmer until it starts bubbling. 
  2. Add the prawns, green beans, peppers, chilli, half of the spring onions, half of the coriander and let them simmer until the prawns are cooked. Add soy sauce, garlic granules, chilli flakes, lemon juice, green chilli (if using these certain ingredients)
  3. Add the noodles to the mix and stir until the noodles are cooked and incorporated into the sauce.
  4. Add the rest of the coriander and spring onions as a garnish and serve with prawn crackers.
