Ingredients
For the marinade
  • 1 kg chicken thighs, with skin
  • 1 tbsp hoisin sauce
  • 1 tbsp light soy sauce
  • 1 tbsp honey
  • 3 cloves of garlic, minced
  • 1 tsp Chinese five spice powder
  • 1 tsp chilli flakes
For basting
  • 1 tbsp light soy sauce
  • 1 tbsp honey
  • 1 tsp dark soy sauce

Chinese five spice chicken

One of my favourite ways to make chicken. It's soo easy and the end result promises juicy chicken with glossy skin. It's tender and packed with umami and a great one to prep ahead of time for easy weeknight meals.


  1. Mix all the marinading ingredients together and smother all over the chicken. Marinate for at least 2 hours or preferably overnight. The longer the better!

To cook:

If using oven

  1. Preheat to 180º C and line an oven tray with foil to catch juices when the chicken cooks. Place chicken on a rack over the lined tray.
  2. Roast for 10 mins, before basting in the honey and soy combination.
  3. Continue cooking for another 5 mins, before turning to the grill for the last 5 mins to allow the skin to crisp up. It should be sizzling and browned by the end.

If using an airfryer:

  1. Select the roast or grill options (if possible) spray the tray with oil.
  2. Cook for 15 mins, basting the sauce halfway through cooking.
  3. Allow to rest for a few minutes before serving for ultimate juiciness!
