  • 340 g Plain flour
  • 220 g Unsalted butter
  • 2 Egg yolks
  • 100 g Golden caster sugar plus extra for sprinkling
  • 160 g Chocolate chips (mix of milk and white)
Chocolate Chip Shortbread
Chocolate Chip Shortbread Chocolate Chip Shortbread

A super simple chocolate chip shortbread recipe. Perfect served with a cup of tea.

  1. Sieve the flour into a large mixing bowl then add the butter. Use the rubbing in method, rub the flour and butter between your fingers until the mixture looks like crumbs.
  2. Add the golden caster sugar and the chocolate chips and mix in.
  3. Add the egg yolks, the squish everything together to form a dough.
  4. Once it has all come together, flatten into a round shape, cover in cling film and chill in the fridge for 20 minutes.
  5. Preheat the oven to 170℃
  6. Take the dough out of the fridge and roll out to just over 1 cm thick, cut into rounds using a 7cm round biscuit cutter
  7. Transfer the shortbreads onto a greaseproof lined baking tray and sprinkle with a little golden caster sugar
  8. Bake in the oven for 20 minutes or until they are lightly golden
  9. Leave to cool for five minutes in the tray before carefully transferring them to a cooling rack to cool completely
  10. Once they are cool, they are ready to enjoy!

As a youngster, I hit rock bottom and landed myself in a young offenders. I managed to turn my life around, became the first person to earn a Gold D of E Award behind bars and through this found my passion in cooking. I was taken on by Jamie Oliver, eventually started my own business and now find myself catering for royals and celebs. I use my love for food to spread joy and help others find purpose and change their lives. I mentor youngsters who have been in trouble with the law and regularly go back into prisons to share my experiences. I find myself being in a very fortunate position where I am able to do something I really love AND get paid for it!
