EASY IRISH STEW
IRISH BEEF STEW
Season beef with salt and pepper.
Heat Olive Oil in a large pot over medium heat.
Add the beef to the pot & brown them on both sides.
Then add onion and cook until soft about a minute or two. Add cumin, coriander, garlic and chilli to the beef and cook until fragrant.
Add the tomato paste and cook until it has softened.
Add the beef stock pot, water, bay leaf and stir until the stock pot has dissolved. Cover and bring to a simmer for close to 45 minutes..Reduce heat and stir occasionally.
Add carrots and potatoes and season with salt & pepper. Simmer until the potatoes and beef are tender.. Just over 20 minutes.
Discard the bay leaf..Then adjust seasoning as needed. Sprinkle parsley cover and let it sit for 10 minutes…
Serve with hard crusted bread or mash potatoes or anything else you like..
