Ingredients
  • 100 g porridge oats
  • 1 medium banana
  • 2 medium eggs
  • 2 scoops unflavoured protein powder
  • 3 egg whites
  • 4 tsps baking powder
  • 1 tsp ground cinnamon
  • 1 pinch of salt
  • low calorie cooking spray
For the toppings;
  • 2 tbsps 0% fat Greek yoghurt
  • 4 sliced strawberries
  • 10 blueberries
  • 1 tbsp honey

Protein Pancakes

Total 15 minutes
  • Add the oats and protein powder into a large jug/bowl and combine
  • Next, add the eggs, egg whites and the banana into the jug
  • Add the baking powder and the ground cinnamon
  • Using an electric whisk preferably, whisk all the ingredient together. You could also use a blender if you didn’t have an electric whisk
  • In a pan, spray some low calorie cooking oil spray and put on a low to medium heat
  • Spoon the mix into the pan in circle shapes. I used approx. 2 tbsps of mixture per circle
  • After a minute or so, when you can see bubbles appearing, flip them over to cook the other side. They should have a nice brown colour on top
  • Once the other side is cooked and they have a fluffy, bouncy texture, stack them up on two plates and serve with your toppings of choice!
