Ingredients

100 g porridge oats

1 medium banana

2 medium eggs

2 scoops unflavoured protein powder

3 egg whites
-
4 tsps baking powder

1 tsp ground cinnamon

1 pinch of salt

low calorie cooking spray
For the toppings;
-
2 tbsps 0% fat Greek yoghurt
-
4 sliced strawberries
-
10 blueberries
-
1 tbsp honey


Protein Pancakes

- Add the oats and protein powder into a large jug/bowl and combine
- Next, add the eggs, egg whites and the banana into the jug
- Add the baking powder and the ground cinnamon
- Using an electric whisk preferably, whisk all the ingredient together. You could also use a blender if you didn’t have an electric whisk
- In a pan, spray some low calorie cooking oil spray and put on a low to medium heat
- Spoon the mix into the pan in circle shapes. I used approx. 2 tbsps of mixture per circle
- After a minute or so, when you can see bubbles appearing, flip them over to cook the other side. They should have a nice brown colour on top
- Once the other side is cooked and they have a fluffy, bouncy texture, stack them up on two plates and serve with your toppings of choice!
