Ingredients
  • 2 ripe avocados
  • 200 g fresh spinach
  • Juice 1 lemon
  • Juice 1 lime
  • 1 chilli de-seeded
  • 40 g of nuts (I used a mix of pistachio and pine nuts)
  • 20 g fresh basil
  • 60 ml extra virgin olive oil
  • 60 g grated parmesan
  • 2 cloves garlic
  • 1 tsp sea salt

Avocado Pesto

If you love Avocados you will love this pesto. It's great to make when you have a load of avocados that need using up and if you're bored of making guacamole.

You can make it and jar it, it will keep in the fridge well as there is enough lime and lemon to not let it brown, you can also freeze it in small portions, either in an ice cube tray or a lolly maker.

Avocados are full of vitamins and nutrients, such as potassium, protein and vitamins; B K C and E. They are good for your body inside and out.

This recipe is quick, easy and healthy and also lets the avocados last that little bit longer.

In a hand blender (I used my smoothie maker) blend all of the ingredients until smooth.

DONE!!!

Pop into an airtight sterilised jar and drizzle more oil on the top and seal. Use mixed into your favourite pasta, spread it over fish or drizzle it over a steak salad.
