Ingredients
  • 2 ripe bananas
  • 1 small zucchini
  • ½ Cup sugar (I used ⅓ cup because I like to reduce the sugar)
  • ½ Cup oil
  • 2 eggs
  • 1½ Cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ Cup cocoa powder
  • ¾ Cup chocolate chips
Double chocolate banana zucchini cake

This cake is super simple and moist and requires no mixer. Sneaky veggies make it a parent’s favourite!

Mash your bananas in a bowl.  Grate 1 zucchini and add it to the bowl.  Add the eggs, oil and sugar and whisk it.

Add all of your flour, cocoa powder, baking powder, baking soda and salt and mix it together until it is just combined.

Add your chocolate chips and mix.  Save some of them for the top of the cake.

Lightly oil a fluted cake pan or bundt pan with a paper towel. Sprinkle with flour and shake off excess.  Pour in your batter. 

Bake at 360F for 35-40 minutes.  Keep an eye on it and remove it when the centre is cooked.  Insert a spaghetti strand in the middle and if it comes out clean, your cake is done.

Let it cool for 5-10 minutes before trying to remove it from the pan.  If it doesn’t come out, loosen the sides using a fork.
