  • 25cm square piece of ready rolled puff pastry
  • 12 asparagus spears, trimmed and with 3cm of the stalks finely chopped
  • 3 garlic cloves, finely chopped
  • 100 g feta cheese, crumbled
  • a sprinkling of chilli flakes
  • handful of pistachio nuts, chopped

A classic seasonal tart, perfect for a summer's day
Asparagus Tart with Feta, Spearmint and Pistachio Asparagus Tart with Feta, Spearmint and Pistachio

Ready rolled puff pastry comes in so handy for a quick and easy lunch. And asparagus teams so nicely with feta and mint. With its striking purple leaves, this is one of a number of varieties of mint I'm growing this year (in pots on the patio, becuase they spread like wild fire), which is a Moroccan spearmint, I believe!

  1. Start with your square of puff pastry on a floured surface and score a 1.5cm border all the way around. Prick the centre a few times with a sharp knife and carefully transfer to a well greased baking sheeet. Set aside
  2. Next, pan fry the garlic and sliced asparagus stalks in a little olive oil for a minute or two to soften. At the same time, steam the asparagus spears for the same length of time and then strain and refresh in cold water
  3. Finally, sprinkle the feta over the base of the tart (avoiding the border). Add in the asparagus stalks. garlic and cooking oil and then lay the asparagus spears on top. Season with freshly milled black pepper and a few chilli flakes, drizzle with a little more oil and bake in a hottish oven for about 20 minutes, until the cheese has started to melt and the pastry is a golden brown. Finish off with the mint leaves and chopped nuts
