Greek Lamb Burgers

Delicious burgers for a summer night!

  1. Add your lamb mince to a bowl with the onion, garlic, spices and bread crumbs, form into balls, then flatten into patties. Make them all the same size so cooking time is easier. Mine were 150g each. Cover with cling film if you're preparing them for later and store in the fridge. Remove from fridge before cooking to get to room temp.
  2. To make your tzatziki: finely slice the cucumber and place on kitchen towel with salt to help draw out moisture. Mix in salt, pepper, cucumber, 1/2 lemon juice and finely sliced garlic into the Greek yogurt and stir together.
  3. Heat your griddle pan with a little oil and add the burgers, cook for 2 minutes on either side to get some colour, then transfer to a 180degree pre-heated oven for 15-20 minutes.
  4. Slice your cucumber, feta and lettuce and tomato ready to go into your burgers.
  5. When your burgers are ready take them out to rest for 5-10 minutes.
  6. Add your buns to the griddle pan to warm them up.
  7. Assemble your burgers and enjoy!
