The Pasta
  • 2 tbsps Olive Oil
  • ½ Red Onion (Fine Dice)
  • 3 Garlic Cloves (Minced)
  • 1 tsp Chili Flake
  • 3 tbsps Tomato Paste/Purée
  • 500 g Cherry Tomatoes (Halved)
  • 1 tsp Oregano
  • 1 litre Boiling Water
  • 500 g Penne
  • Sea Salt & Pepper
The Garnish
  • Burrata (Torn)
  • Parmesan Cheese
  • Fresh Basil (Torn)

One Pot Margherita Pasta


  • Heat a large pot to medium/high heat, add olive oil (add water to kettle and bring to a boil)
  • Add onions and garlic to the pot and cook for 1-2 mins
  • Add chili flake and stir to combine
  • Add tomato purée and cook for 1-2 mins
  • Add cherry tomatoes, oregano, sea salt & pepper and cook for 1-2 mins
  • Add boiling water and pasta, cover and cook for 14-16 mins on medium/low heat until sauce has thickened and water has evaporated (stir occasionally to prevent sticking)
  • Garnish with fresh torn basil, burrata pieces and grated parmesan
  • Enjoy!
