1.Bring a heavily salted pan of water to the boil and add your pasta and cook for a minute less then it says on the packet, keep some of the pasta water aside to add to your sauce.
2.Add your pine nuts to a pan and cook until golden then add to a blender along with the Parmesan, basil, garlic and olive oil and blitz until smooth.
3.Heat a little oil in a pan and add the prawns, cooking for 2/3 mins on each side and add 3 tbsps
of the homemade pesto and double cream, giving it a good stir, once the pasta is cooked drain ( remember to keep some of the pasta water ) and add to the prawns and sauce, give it a good mix making sure all the pasta is covered.
4.Add some of the pasta water until you get a nice consistency on the sauce and serve, top with more grated Parmesan, chopped basil, pine nuts and pepper
