Garlic chilli prawns

This is such a quick and simple tapas dish that it barely warrants a recipe! Perfect as a part of a tapas feast.

  1. Add oil and the whole crushed garlic clove to a heavy based cold frying pan and turn heat to low. You want to garlic to infuse the oil, and the low heat stops it from burning. Let it heat for 3-5 minutes, and remove the garlic,
  2. Switch up the heat to high. Add the prawns - they will quickly start turning colour. Don’t be tempted to stir yet - wait around 1 minute, then add the sliced garlic and chilli, and toss. Cook for approx 2 minutes until completely cooked.
  3. Remove from the heat and toss with the parsley and lemon juice. Season with a little black pepper. Serve immediately.
