No bake, white chocolate Oreo cheesecake

This cheesecake not only looks amazing but tastes it too! No bake cheesecakes allow for a lighter dessert. Get creative with your choice of biscuits!

  1. Grease and line the bottom of an 8 inch wide a 3 inch deep loose bottom cake tin.
  2. Start with your base, crushed your Oreos into a fine crumb.
  3. Melt your butter and stir into the crushed biscuits. Mix until it resembles wet soil.
  4. Begin to press your crushed biscuit mixture in the base and up the sides of the prepared tin. Make sure the mixture is even and compact.
  5. Set aside in the fridge to chill.
  6. Now for the filling. Melt the white chocolate in the microwave in 15 seconds burst to avoid burning.
  7. Once the chocolate is completed melted and smooth set aside to cool slighty.
  8. Beat the cream cheese in a large bowl until smooth. Add the cooled white chocolate and beat until well combined.
  9. In a separate bowl, whisk the cream, sugar and vanilla until soft peaks are formed.
  10. Fold your cream mixture into the cream cheese and white chocolate mixture.
  11. Lightly crush the Oreo biscuits for your filling and fold this through the cheesecake filling mixture.
  12. Evenly spread the mixture into the chilled biscuit base made before.
  13. Allow to set in the fridge for a minimum of 4 hours, preferably over night.
  14. Once set, remove the cheesecake from the tin. To do this apply gently heat around the edges with a hairdryer or hot damp tea towel.
  15. Decorate your cheesecake with more Oreos or melted chocolate.
  16. Use a hot knife to slice and serve!
