Ingredients
  • 2 cups polenta
  • 8 cups water (add more if it's on the thicker side)
  • Large handful spinach (chopped)
  • 1 shallot (sliced)
  • 3 garlic cloves
  • 3 tbsps sun dried tomatoes (sliced)
  • 1 tbsp (heaped) dried basil/ oregano (or both)
  • 1 tsp course black pepper
  • 4 tbsps virgin olive oil
  • ½ tsp cayenne pepper
  • Salt to taste

Baked Herby Polenta

  1. Preheat the oven to 200℃. Lightly grease a baking dish with olive oil
  2. In a frying pan, add 1 tbsp olive oil and fry the shallots, garlic, salt and cayenne pepper. Fry for a few minutes, turn off the heat and leave to one side
  3. In a pot boil the water with 1 tsp of salt. As the water is boiling, stir in the polenta. Mix constantly until it begins to thicken
  4. Stir in the spinach, sun dried tomatoes, herbs, the rest of the oil, black pepper and more salt to taste
  5. Place into the baking dish and bake in the middle of the oven for 30 minutes. Delicious with a little grated parmesan or pecorino on top!
