Prep 5 minutes
Total 30 minutes
  1. Preheat oven to 200c, In a frying pan over a medium heat, add the olive oil & chopped onions and cook for 4-5mins until soft, then add the garlic & cumin seeds and cook together for a further 2mins.
  2. Add the chopped tomatoes to the pan and cook for for 3/4mins until it reduces slightly, then add the black beans and mix through then take off the heat.
  3. Oil an oven proof dish and place the tortillas in it pressing them down to the sides, empty the mixture from the pan into the dish, smoothing it down and making sure its nicely pressed to the edge.
  4. Make 5 little wells into the mixture and crack the eggs into them, sprinkle over the grated cheese and chilli flakes and place in the oven to cook for 10mins until eggs are cooked.
  5. Once done, take out the oven and garnish with fresh parsley then serve. Enjoy
