Ingredients
  • 900 g Chicken Feet
  • 50 g Ginger
  • 1 Onion
  • 2 Scallion
  • 5 tbsps White Vinegar
  • 5 Cilantro
  • 2½ tbsps Salt
  • 150 g Fermented Thai Chili+ Pickle Juice
  • 5 g Sichuan Peppercorn
  • 50 g Fresh Thai Chili
  • 5 g Chili Sauce
  • 1½ tbsps Chicken Powder
  • 2 tbsps Cooking Wine

Spicy Chicken Feet Cod Side Dish

  1. Cut chicken feet nails and put them in a pot filled with water, add in a few slices of ginger, cooking wine, scallion and  Szechuan peppercorn, bring water to boil for 15 minutes or so until they are completely cooked
  2. Slice more ginger, fresh red chili, lemon, cilantro and onion for the marinate
  3. Remove chicken feet from the heat and simply cool them off by putting them in iced water for a few minutes
  4. Debone chicken feet and finally marinate chicken feet with sliced ginger, onion, red chili, white vinegar, chicken powder, salt, fermented chili and cilantro. Refrigerate for at least a few hours or 24 hours preferably and serve cold
