  • 2 Chicken breasts
  • 2 tbsps Smoked paprika
  • 1 Red pepper
  • 1 Orange pepper
  • 2 Red chilli
  • 1 Garlic bulb
  • 1 Handful cherry tomatoes
  • 4 Spring onions

1.Preheat the oven to 200℃ and then coat the chicken breasts in a drizzle of oil then sprinkle the smoked paprika all over the chicken making sure they are fully coated and place them on a try and into the oven for 25/30 min or until internal temp is 75.

2.Now slice the peppers in half removing the seeds and the stalk, and place on a baking tray along with the tomatoes, chillies and garlic bulb ( will removed the skin after ) cover in olive oil and bake for 20/25 min, now heat a frying pan and start getting a nice charr on the spring onions.

3.Now everything is cooked get the chicken out to rest and put the roasted peppers, tomatoes, chilli & garlic into a food processor and blitz until you get a smoothish sauce, you might have to add a drizzle oil to it then serve onto a plate, then add the spring onions and slice the chicken in half and place onto the romesco sauce, season with salt & pepper.
