Gooey Chocolate Brownies

Chocolate brownies are one of my guilty pleasures. I can never say no if someone offers me a gooey chocolate brownie, but making your own just takes it to the next level. I made these half with Nutella and half with Biscoff but feel free to add whatever you like!

  1. Preheat your oven to 160 degrees.
  2. Add to a bowl your butter and 200g dark chocolate and melt (but be careful not to burn!). Set to one side to cool whilst you do the rest!
  3. The other 200g chocolate, chop up into chunks ready to add to your mixture later.
  4. In another bowl, add your eggs and sugar and whisk until light and fluffy and full of air.
  5. Fold your egg white and sugar mix into the chocolate but being careful not to knock the air out of your mixture - fold not mix!
  6. Add your sieved coco powder and flour to the mix and fold this in too. Add your chocolate chunks then pour into your baking tray - I use a 9 inch by 10 inch tray lined with baking paper.
  7. Using two teaspoons, spoon your spreads into blobs on the top of your brownie mix. I use about 6 blobs on each side. You can use any spread of choice!
  8. Pop into the oven for 8 minutes, remove and swirl the blobs into the mixture so it combines. Pop back into the oven for another 27 minutes. It should be still wobbly in the middle when you remove it but firmer on the edges. Leave to cool in the tray and once cooled, remove and pop into the fridge over night. Trust me on this one! As much as you want one now, you’ll appreciate it so much more the next day!
  9. You should be able to cut into 18 squares - enjoy!
