  • 1 500g fillet of fresh salmon
  • the juice from one lime
  • 1 tbsp runny honey
  • 1 tbsp dried jerk spice mix
  • 1 small can of sweetcorn, drained
  • 5 cherry tomatoes, quartered
  • 1 nectarine, cut into small chunks
  • some finely chopped parsley

This is such as easy meal to make and it's so versatile... as a mid week family meal, a dinner party centerpiece or a Friday night supper in front of the TV. Simple, healthy and absolutely jam packed with flavour. Buy a big 500 - 700g fillet if you can - it can then be served up in exactly the portion sizes you want... perfect!

  1. Start with the salmon on a well greased baking sheet. Pierce the flesh in several places with a sharp knife and pour over the runny honey and half the lime juice. Then sprinkle generously with the jerk spices, season well, drizzle with a little oil and pop in a hot oven (180ish) for 15/20 minutes, until the salmon is cooked through
  2. In the meantime, make the salsa with all the other ingredients... in a large bowl. Add in the rest of the lime juice and a good glug of extra virgin olive oil. Season and mix well
  3. Finally, when the salmon is ready, transfer to a serving plate and spoon over half the salsa. Serve the other half on the side with some rice
