Vegan Chocolate cake

I have had so many requests for vegan recipes. I have been working hard to develop the ultimate vegan chocolate cake and I've cracked it! No one in my house could believe this was vegan!

ingredients

For the cake

  • 85 g Cocoa powder
  • 130 g soft dark brown sugar
  • 140 g Caster sugar
  • 175 Oil - coconut/ vegetable/ sunflower
  • 1½ tbsps White wine or apple cider vinegar
  • 360 ml Dairy free milk
  • 240 g Plain flour
  • 1 tsp Baking powder
  • 1 tsp Bicarbonate soda
  • ½ tsp Salt
  • 2 tsps Vanilla essence
  • 1 Shot espresso (optional)

For the Ganache

  • 2 tbsps Brown sugar
  • 165 ml coconut milk or cream
  • 180 g Vegan or dark chocolate

For date caramel

  • 100 g Medjool dates
  • Pinch salt
  • 1 tbsp Peanut / almond butter
  • 70 ml Dairy free milk

Cook for 30-40 minutes (until skewer comes out clean) at 160’ degrees fan 180’ degrees electric oven
