Ingredients
  • 40 g 'Nduja
  • 1 Lemon (Zest & Juice)
  • 200 g Pappardelle Pasta
  • 1 Garlic Clove
  • Small Bunch Of Fresh Parsley (Chopped Finely)
  • 1 tsp Olive Oil
  • 1 Shallot (Finely Diced)
  • Salt & Pepper

'Nduja & Lemon Pasta

Total 10 minutes
  1. In a large frying pan over medium/high heat, add the olive oil and shallots and cook for 2 mins until the shallots soften, then add the nduja and begin to break with the back of a wooden spoon.
  2. In a saucepan over high heat, add boiling hot water and a good pinch of salt and add the fresh pappardelle and cook for 3mins.
  3. Back to the frying pan and once the nduja has broken up, then add the garlic and mix together.
  4. Once the pasta is cooked, with tongs drag the pasta from the saucepan into the frying pan and add a little of the pasta water to clean up the pan. Stir together for a minute.
  5. Now add the lemon zest and lemon juice and toss together, season with salt and pepper. If you want it a little bit saucier then drop a bit more pasta water in, if your happy with how it tastes then add the parsley, stir through and serve. Garnish with some parmesan cheese (optional) and dig in. Enjoy
