Ingredients
  • 500 ml Whole milk
  • 1 shallot
  • 1 Bay leaf
  • 3 Cloves
  • 50 g Unsalted butter
  • 50 g Plain flour
  • 2 tbsps Nduja
  • Salt and pepper
  • Chilli flakes
  • Chopped basil
  • 100 g Cheddar cheese grated
  • Pasta for 4

Quick, easy and delicious mid week pasta...

Heat the milk in a saucepan and then add the shallot (after slicing in half), bay and cloves. Immediately take off the heat and allow to infuse for half an hour. Take another saucepan and melt the butter then add in the flour stirring constantly to form a paste. Remove the shallot, bay and cloves from the milk and slowly add to the butter paste mix whilst on a low heat. Whisk this continuously as it thickens.


Once thickened, add in the grated cheese, nduja, basil and salt and pepper. Stir. Add in your pasta once cooked and serve with some grated parmesan.
